When an ingredient runs out, the dish marks itself sold out on the iPad, on WhatsApp and on the web at the same time. It stops selling on its own.

Purchase orders that reconcile

You order, approve and receive against the order. If what arrives doesn't match, the difference becomes a task with the number on it — it doesn't quietly disappear.
